Cream of Carrot Soup

Chickpeas and ChickenHeat two tablespoons of extra virgin olive oil in your pressure cooker at medium flame. When it starts to shimmer, add one medium thinly sliced onion and cook till the onion is soft. Then add one tablespoon smoked Spanish paprika, 15 ounces canned chickpeas, one can dice tomatoes, four pounds chicken pieces, and two cups chicken stock. Also add salt and pepper to taste. Seal the pressure cooker lid and bring to high pressure. Then cook for fifteen minutes and cool the cooker using the quick release method. Open the lid and cook again at high flame while constantly stirring. When a thick consistency is achieved like that of stews, add two teaspoons vinegar and mix. Serve with chopped parsley leaves and a little extra virgin olive oil.

Chocolate Mousse Cheesecake

Take a springform pan (8 inch) which can fit inside your pressure cooker. Grease the pan and set aside. Mix a pinch of ground cinnamon and half cup chocolate cookie crumbs. Put the crumbs in the pan and gently press to form the crust. Next melt one tablespoon butter and one ounce semisweet chocolate. Set the mixture aside. Using a food processor, Chocolate Mousse Cheesecakeprocess cream cheese till it’s smooth. Then add the chocolate and butter mixture and process again till a homogenized mixture is formed. Add a cup of heavy whipping cream, a teaspoon of vanilla extract, 2/3 cups sugar, and two beaten eggs. Beat all the ingredients and sieve 1 ½ tablespoons unsweetened cocoa powder over the mixture. Pulse the mixture on low speed until cocoa powder is thoroughly mixed. Pour this batter on the crumbs in the pan. Cover up the cake with wax paper and wrap the whole pan using aluminum foil.
