Cream of Carrot Soup
Melt quarter cup butter in a pressure cooker and add 2 ½ cups diced onions and salt to taste. Cook it using the best pressure cooker while stirring until onions becomes translucent. Then add one large potato (peeled and diced), 1 ½ cups chopped celery, 6 chopped green onions and eight cloves of garlic. Cook for five minutes and then add six cups baby carrots and ten cups vegetable stock. Increase flame and seal cooker lid and bring it to pressure. Reduce flame to medium and cook for seven minutes. Using quick release method release pressure and after removing lid cook again and add half teaspoon mild curry powder and four cups whipping cream. Blend with a hand blender and add salt and pepper to taste.
Chickpeas and Chicken
Heat two tablespoons of extra virgin olive oil in your pressure cooker at medium flame. When it starts to shimmer, add one medium thinly sliced onion and cook till the onion is soft. Then add one tablespoon smoked Spanish paprika, 15 ounces canned chickpeas, one can dice tomatoes, four pounds chicken pieces, and two cups chicken stock. Also add salt and pepper to taste. Seal the pressure cooker lid and bring to high pressure. Then cook for fifteen minutes and cool the cooker using the quick release method. Open the lid and cook again at high flame while constantly stirring. When a thick consistency is achieved like that of stews, add two teaspoons vinegar and mix. Serve with chopped parsley leaves and a little extra virgin olive oil.
Chocolate Mousse Cheesecake
Take a springform pan (8 inch) which can fit inside your pressure cooker. Grease the pan and set aside. Mix a pinch of ground cinnamon and half cup chocolate cookie crumbs. Put the crumbs in the pan and gently press to form the crust. Next melt one tablespoon butter and one ounce semisweet chocolate. Set the mixture aside. Using a food processor, process cream cheese till it’s smooth. Then add the chocolate and butter mixture and process again till a homogenized mixture is formed. Add a cup of heavy whipping cream, a teaspoon of vanilla extract, 2/3 cups sugar, and two beaten eggs. Beat all the ingredients and sieve 1 ½ tablespoons unsweetened cocoa powder over the mixture. Pulse the mixture on low speed until cocoa powder is thoroughly mixed. Pour this batter on the crumbs in the pan. Cover up the cake with wax paper and wrap the whole pan using aluminum foil.
Next, put 1 ½ cups water in the pressure cooker and put the pan on a trivet in the cooker. Close the pressure cooker lid and bring it on high pressure. Reduce the heat and cook for 50 minutes. Then remove heat and let the cooker cool using the natural release method. Take out the cake and let it cool at room temperature. Prior to serving, remove from pan and refrigerate for eight hours.
